Holla my Honey Bunches of Oats!!!

Seriously, even after that long ass weekend recap post, I still received awesome comments about my pseudo-boring weekend. I thought I was as dull as an unsharpened pencil (ewe bad comparison)….but I mean we can’t be party animals all da time, right? And you guys still know how to make a girl blush.

I am trying to keep up with my comments but right now is a bit difficult…come next week I am back in action. Im still reading tho…believe that.

Now just because I took it easy last weekend, don’t fear my friends. This weekend will be insane and I will be participating.

Warning you now. I am Irish and I am proud of it…… put 2 and 2 together!

Since this week I am very busy, I.E. I work 32 hours and have finals and am attempting at getting my Spring bod together, my eats have been repetitive…yet obvi, still AMAZINGLY delicious!

Breakfasts have been with an OVERNIGHT guest that has been making a frequent appearance as of late.

Why didn’t anyone tell me that overnight OATS were life-changing?

I normally don’t like warm oats, because warm banana and warm peanut butter skeeve me out.

However, cold oats with yogurt and banana and peanut butter is EPIC.

So here are overnight oats…Lo sty.

(eaten Tues, Wed and soon to be Thursday and Friday)


1/2ish oats (I kinda measure loosely)
1/2 cup skim milk
1/2 cup low fat vanilla yogurt (Don’t fear the fat! I find this gives it volume AND better consistency/texture/flavor and more protein)
cinnamon
splash of Coffee-Mate Irish Cream

toppings: large bananas that make you go “TWSS” and large scoops of peanut butter.

try this now.

Whilst at work on Tuesday, I was having an emotional day and stressing out over school….. I feel a certain Aunt is coming this Friday.

However my day instantly improved when Tara, my lovely co-worker surprised me with sushi from Whole Foods!!!

3 pieces of veggie, 3 spicy shrimp, 4 salmon and avocado rolls with ginger/soy/wasabi!


gah. I love sushi more than anything else.

What else do I love?

Answer: Consuming more diet coke and coffee in 2 days than I have in my life.

3 lattes on Tuesday and 3 lattes today….free lattes at work = Lo goes CRAZY with CAFFEINE.

Last night, I had my 2nd to last, Photojournalism class–here, I didn’t pay attn whatsoever and totally wrote my Final paper for another class during…..priorities, kids!

After class, I met up with DJ for Happy Hour at McCormick and Schmicks around 9:30 for a late dinner. I was hangry since lunch was uhhh 7 hours before….

Lesson: Always carry a snack in your purse or pocket or backpack. Always.

I almost ate this girls cupcake next to me and that would have been bad for my Lent resolution AND for the girl who really enjoyed this Nutella filled PB cupcake. I was in agony watching her.

So back to dinner.

I enjoyed a Guinness beer and we split appetizers of mussels, fried pickles, fish tacos and bruschetta. DJ orders a BBQ Turkey Burger too.

I ate probs 2/3 the mussels and pickles and 1 fish taco and 1 shrimp bruschetta.

sidenote: I love mussels almost as much as sushi. In fact I think I might become a fish very soon.


No workout Tuesday because when you work 8 hours and directly go to a 4 hours class, exercising seems a bit extreme. 12 hours on my feet is good nuff.

This morning I enjoyed overnight oats at work again…with a SF vanilla latte of course.


I tried this Builder Bar (Cookies and Creme) and it was mediocre….not too cookie-y and not too creamy. I paired it with a Braeburn apple and PB.

Side Thought: I think I am slowly emptying the COSTCO size PB jar at work as of late. This is not an issue with me, but I feel work doesn’t like my nut butter addiction too much.

(that is a NF Chai in the mug BTW)


confession: 3-5pm boredom at the host stand hits. I drank 4 Diet Cokes from the Soda Fountain and ate a mini biscuit and piece of French bread, from the back kitchen…. My energy was suddenly LIFTED!

CONFESSION 2: I suddenly crashed again and ordered some dinner from work around 6pm, because I was sooooo tired and hungry.

Enter: Grilled Chicken Tortilla Salad with a side of Guacamole and Cilantro Herb Dressing….AND 2 more mini biscuits and a tiny piece of French bread. Yes I love bread and who can resist such cute, small bread pieces?


I LOVE CARBS.

and this salad stood NO CHANCE.

Currently: watching SUPERBAD, digesting and going to the gym in an hour to workout! Its gonna be some Elliptical-ness and weights/abs I am sure.

I will see ya’ll tomorrow for more overnight oats, an attempt at a 4 mile run, and my last Arts and Entertainment class of the Winter Quarter!!!

  1. Overnight oats are the shizzle. All different varieties – pumpkin, with cocoa powder…try mixing the peanut butter in it the night before. I did that last night and got a hint of PB in each bite!!

  9. The one time I tried to make overnight oats, I did it with steel-cut oats, thinking I was cool trying something no one had thought of before. I'm guessing someone thought of it before and discovered it DOESN'T WORK. Must try it the right way…soon.

  17. Aren't overnight oats BOMB?! I'm currently battling the obsession as well. Er…willingly giving in :P I think I may just make a batch right now to eat tomorrow morning!LOVE sushi from Whole Foods. Usually I'm a sushi snob (i.e. not a fan of pre-packaged) but some of my favorite sushi experiences have been from WF. Salmon + avocado brown rice sushi? YES PLEASE!
